This recipe comes from my smoothies bible written by Pat Crocker and its delicious and lends itself perfectly to Kale as the leafy greens called for in the recipe. You can also substitute spinach, cabbage, Chinese cabbage, etc.
Garden Goodness Smoothie
3/4 cup chopped cored fresh or canned tomatoes 175 ml
1 tbsp lemon juice 15 ml
1/2 cup chopped leafy greens 125 ml
1/4 cup chopped carrots 50 ml
2 tbsp chopped red or green pepper 25 ml
1 sprig parsley chopped*
1 tbsp raisins 15 ml
1 tbsp chopped onion 5 ml
1/4 tsp celery seeds 1 ml
1 cup ice cubes crushed 250 ml
In blender, combine tomatoes, lemon juice, greens, carrot, pepper, parsley, onion, celery seeds, and ice cubes. Process until smooth.
Serves 2.
*If you are pregnant, limit your intake of parsley to 1/2 tsp (2 ml) dried or 1 sprig fresh per day. Do not take parsley if you are suffering from kidney inflammation.
