What kind of coconut milk to buy?

I can't wait to try your smoothie recipes! I was at the store looking for coconut milk. There was a ton of Coconut Water in the health section (this was all refrigerated). Then I did find a can of Coconut Milk in the international isle. The coconut milk is very high in fat, so I'm not sure if this is what I should be using.

There was also cream of coconut in the liquor section, but I'm sure that's not what I should use. =)

That's a great question. In my recipes, I use coconut milk. You can buy it in the can or in the carton in the refrigerated section. Make sure to buy canned coconut milk without all of the added sugar. Also, the coconut milk in the can contains a lot more calories than in the carton. This is because the canned version is thicker like "heavy whipping cream". And the milk in the carton is more like 1% milk.

So you have a couple of options to cut down calories...

#1 - Try the coconut milk in the carton. The main brand that I see at the stores is So Delicious.

#2 - Use the canned coconut milk. I like the brand "Native Forest". If you need a cup of coconut milk for the smoothie, use 1/2 cup of coconut milk mixed with 1/2 cup of water. This will cut the calories in half.
